For our first recipe, let’s start with a cocktail that dates back to Prohibition.
'bees knees' was slang for 'the best' back then, and after a taste I think you will agree.
The story goes that these flavours were added to help mask the less than desireable perfume of bath tub-brewed gin, but it’s such a beautiful pairing of flavours that it springs to mind on Summery afternoons when the air is heavy with the scent of blossom and the hum of backyard bees.
Bee’s Knees

2 oz your favourite Gin (bathtub brewed or otherwise)
3/4 oz fresh lemon juice
3/4 oz honey simple syrup*
Garnish with a lemon twist
Add all ingredients to your shaker except for the garnish. Shake with ice and strain into a chilled cocktail glass.
Garnish with a lemon twist.
*For cocktail neophytes simple syrup is equal parts sugar and water simmered until dissolved and cooled before using. This is simply a honey version
